Storing Your Wedding Cake

The top tier of the wedding cake is traditionally saved for the christening of the couple's first child. If you want to store your wedding cake for this purpose, or maybe to eat on your first anniversary, make sure it is a fruitcake - a sponge cake will probably not last a week, never mind a year!

Find a close-fitting, empty, cake or biscuit tin, or an airtight polythene storage box, making sure it is scrupulously clean and perfectly dry. Line with layers of greaseproof paper and place the cake inside. Remove any decorations and ribbons or flowers, layer more paper around and on top of the cake, fit the lid and store the box somewhere cool and completely free from condensation or damp of any kind. It is best to leave on the original icing to help to preserve the cake.

A well-made fruitcake should keep for a very long time in the right conditions, although the icing may discolour a little. The old icing can be simply be removed and replaced for the next occasion.

If you are planning to save your cake for a longer time, you can freeze it. Completely cover the cake with cling film, making sure that it is airtight. Follow by wrapping with at least 2 layers of tinfoil, then place in a double freezer bag. The more protection you give the cake, the less chance of freezer taste or freezer burn.

A cake stored in a cool room will get better as it matures over time, whilst a frozen cake will taste just the same as it did when you put it in the freezer.
